Chicken salad!


I could not believe that I’d never made up a batch of Chicken Salad before. Well, that changed on the day a friend (Bobby Carter) presented me with a large can of Swanson Chicken Breast meat that he has mistakenly purchased and didn’t want. After reading the excellent nutritional information, I decided to give this recipe a go. Here were the ingredients I used;

  • 2 cups cooked chicken breast, cubed
  • ½ cup mayo
  • 2 stalks celery, chopped
  • 2 tbsp yellow onion, finely diced
  • 2 tsp mustard
  • 1 ½ tbsp relish
  • Salt n Pepper to taste

Prep time took about 15 minutes, chopping and mixing the ingredients. I also used a regular hamburger bun. Note that non of the ingredients were exact. (I’ve been making dishes like this for many years and have developed a knack when it comes to proper amounts). This dish is actually very similar to making potato or tuna salad.
